Chicken, Rice, and Gravy

This recipe is one that the kids love, it’s simple to make, and reheats great. It came from their Mother’s family and was something they ask for all the time. It is mostly a “set it and forget it” recipe, requiring only 2 real steps. It’s traditionally served over white rice but you could substitute it with pasta (I’d recommend penne or rigatoni) if you have someone who doesn’t care for rice but it’s best served that way.

  1. Put the chicken in a medium sized slow cooker. You don't need to prep it, just toss it in.

  2. Mix the dressing packets and the water in a bowl, being sure to thoroughly whisk them together, then dump over the chicken.

  3. Set the slow cooker on HIGH for 3.5 hours and just let it run. You don't need to do anything until the time is up.

  4. Soften the cream cheese a little, microwave is fine for this, and mix it with the cream of chicken soup. It doesn't have to be perfectly blended, just smooth, and then dump it over the chicken and mix it in.

  5. Cover the slow cooker again and set on HIGH for 1 more hour.

  6. You can serve the chicken whole, but traditionally it's shredded and all mixed together. Serve it over rice.
